Recipe: Gluten Free Dairy Free Blueberry Banana Pancakes



2 very ripe small bananas

4 organic or pastured eggs

1/4 teaspoon cinnamon

2 tablespoons coconut flour

1/2 teaspoon vanilla extract

1 tablespoon maple syrup

Dash sea salt


One tablespoon coconut oil or ghee for the pan or griddle.


1️. Mix the eggs and the ripe bananas very well.                      

2.Stir in vanilla extract and maple syrup.

3.Add the coconut flour, sea salt and cinnamon and let sit for a few minutes so the batter thickens.

4.Heat the griddle or pan with the coconut oil on medium.

5.use 2-3 tablespoons batter for each pancake.

6.When the pancake begins to bubble, sprinkle a handful of blueberries on top.

7.Cook until the pancake is brown around the edges and then flip. If it's too loose and batterish, just wait another minute or two.

8 Cook on the second side for another minute or two.                       

Enjoy the pancakes with more blueberries on top, or almond or coconut butter
