Recipe: Kale Cabbage Slaw with Creamy Pepita Dressing


This Vegan gluten free dairy free salad/slaw has become one of my summertime salad staples thanks to It's a huge hit whenever I share it.

The dressing is great for other salads so make extra and store in the fridge.  

Salad ingredients:

1/2 bunch Lacinato/Dino kale (de-stemmed and chopped).

1/2 head red cabbage, chopped

1/4 cup dried cranberries

2 tablespoons raw pumpkin seeds

Dressing ingredients:

2 tablespoons raw pumpkin seeds (pepitas)

2 tablespoons water

1 tablespoon organic Dijon mustard

Juice of one large lemon

1/ 3 cup organic olive oil evoo

1 tablespoon raw honey

Place all ingredients in blender and add salt and pepper to taste.

Toss with salad ingredients - let sit for at least an hour.
