Recipe: Kitchari Recipe
Kitchari is a traditional Ayurveda dish, with a base of mung beans and rice. Spices like cumin, coriander, fennel and fresh ginger aid in digestion. Adding veggies is optional - I love to add some broccoli for the last few minutes of cooking. Kitchari is a perfect food to give your digestion a break.
Soak 1/4 cup rice and 1/2 cup mung beans overnight
Rinse and strain
Heat a large soup pot and add one tablespoon ghee of coconut oil
Stir in 1 tablespoon curry powder OR 1 teaspoon each mustard seeds, cumin seeds, fennel seeds
Grate 1 tablespoon fresh ginger into the spice mixture stir for a minute
Add mung beans and rice and stir.
Add 5-6 cups water or broth and bring to a boil.
Reduce heat, cover and cook for 25-30 minutes.
For firm veggies like carrots broccoli and cauliflower, add to the pot half way through.
Turn off heat and stir in greens like like kale spinach or Swiss chard. Let sit for five minutes
Salt to taste.
Add a squeeze of fresh lemon or lime.
